BRILLIANTISM: THE FAINT

THE FAINT

Being something old- and new-seeming, this thing kind of reminds me of The Faint.

I created a killer salad the other night. I usually just throw stuff together and hope it works, which it often does. Sometimes, however, when the stars align and all sorts of mystical dimensions shine imperceivable luck into the reupholstered snow globe that is my life, my salads really soar. Try this one on for size:

1 bag of shelled edamame
2 ears of white corn
1/2 cucumber
2 tablespoons white balsamic vinegar
1 tablespoon olive oil
Salt and Pepper to taste

Boil the edamame for five minutes. Drain and set aside. Shuck the corn and boil for 10 minutes. Aw shucks! Then, cut off the kernels and combine with edamame. While cooking the corn, chop the cucumber (you can use a whole cucumber if you want). Mix in a bowl with the vinegar, olive oil, salt and pepper. Then put your feet up and tell your tongue to be prepared.

Served here with a pineapple sausage with sauteed onions, ketchup and dijon.
